(5/2024) This is a blend of traditional Cava grapes Macabeo, Xarel-lo, and Parellada. Though officially a non-vintage wine, it is composed entirely of the 2018 vintage, and this batch, "Cupada No. 25," is the later disgorgement, adding even more complexity. Crisp and clean, with green apple, fresh lemon, and crushed stone, this staff favorite bubbly finishes with biscuity richness. Winemaker/grower Pere Mata is making some of the finest sparkling wines outside of Champagne, and the prices are absurdly low!
