Marc Soyard is a hand-selected young vintner from the Jura who is crafting organically-farmed wines from this small 8-hectare monopole, which is the only vineyard in the entire Coteaux de Dijon appellation! Informed by six years spent in Vosne Romanee, Marc makes wine very naturally - hand-harvesting, indigenous yeasts, and aging in neutral French oak barrels before bottling unfined and unfiltered. A wonderful wine offering ginseng, apple crisp and chestnut, complicated by a slight oxidative note. With beautiful acidity driving the palate, it shows flavors of Granny Smith apple, salty citrus, wet stone minerality and a touch of leesy creaminess. Lots of personality!
