(9/2023) This story is awesome. Several years ago, Pieter Walser participated in a wild experiment at his winery where he had a clinical psychologist come in and measure his blood oxygen levels, heart rate, eye reactions and brain waves while doing barrel tastings. The grapes he reacted to the most favorably he blended together and created the "Orbitofrontal Cortex" white. Now, we can't hope to guess what Pieter tasted, but we got plenty of apricot, nectarine, salinity, beeswax and limestone, all on a deceptively unctuous, alluring palate. Fantastically complex, this is a transcendent wine. Refreshingly crisp, it makes you really think. Fantastically complex for $23.99, this is one of Pieter's best wines.
